It’s the first day of Summer here in Oz that also means summer bodies are coming out! Eek.. Are you ready?
Summer bodies are made in Winter right? Yeah Yeah we all lapse a little over the cooler months, motivation lacks, mood depresses and of course the cold weather makes you just feel like cuddling up on the couch with a hardy big bowl of comfort food and watch Netflix sound familiar?
Don’t stress you are only human but now being the first day of summer is a good time to kick start back into your healthy eating routine. Warmer weather is on it’s way so you can get out embrace the sunny weather and celebrate with some clean nutritious food that is low-calorie but still just as for-filling. You will feel much better for it and your bikinis will be thanking you too!
Here is a super clean healthy salad to get you started!
Chicken, Green Beans, Spiralised Zucchini & Rice Noodle Salad Dressed with a Creamy Tahini Dressing
The latest craze in foodie world is spiralizing vegetables, in all good fun it looks incredibly cool but more importantly is a healthier, low carb alternative to rice or wheat noodles and pasta. Zucchini is the main attraction of spiralizing though you can use other vegetables such as pumpkin, sweet potato or broccoli stalks. The concept of having raw vegetables may be a little hard to get your head around at first so I suggest you start with the zucchini and build up to the others. All it needs is to be mixed through your favourite pasta sauce or with your salad ingredients and dressing, its that easy.
Zucchini Spaghetti Bolognese
Lets get something straight, if you have your heart set on a bowl of pasta go have a bowl of pasta it may look the same but it doesn’t exactly taste the same. Although I do love it, and paired with other tasty ingredients you have a very nutritious meal indeed.
You will need a vegetable spiraliser to make the zoodles I have pictured some below they are quite easy to find now, most kitchen stores and large department stores will stock them.
One of my favourite salads is Kale and Quinoa not to mention it’s a superfoodie’s dream. Quinoa is something I eat regularly because of it high protein and fibre levels but also it is a slow releasing energy carbohydrate (low GI) making it a powerful energy food.
Kale is low in calories, high in fibre and has zero fat, it’s also filled with so many nutrients, vitamins, folate and magnesium making it a top shelve ‘superfood’, convinced yet?
Next time you do your groceries grab bunch of kale and try it out. Kale can have a bitter flavour so by gently squeezing/massaging the leaves makes them more tasteful. Add your favourite salad vegetables like tomatoes, cucumbers, grated carrot, shredded cabbage, avocado then add this creamy dressing for extra goodness and you are on your way to feeling great.
