Soup season is upon us and what better way to start the winter off than with a big bowl of nourishing cauliflower chowder. We often associate chowder with the classic seafood chowder with its thick, creamy consistency it naturally sounds and feels comforting in these colder months.
This vegetarian version is a lighter take on an authentic chowder recipe which is normally made with floury potatoes and heavy cream. Can also be easily made vegan with the elimination of the cheese. Even though it doesn’t contain those heavy ingredients with the addition of the cannellini beans it simulates the same sort of fulfilling comfort.

Hello Winter… It is the first day of Winter in Australia and it has definitely shown up ready for the party. It was a crisp chilly morning on the GC. The kids all slept in late (which never happens) making us rush for the school drop off creating plenty of hysteria in the house. Welcome Winter I can not wait! (slight sarcasm)
After visiting my sister in the vibrant city of Melbourne I can’t complain much they have been putting up with cooler weather for months now. I came back gaining a better understanding on how weather affects places differently and how it affects your city socially. We all know that in our warm climate here in Queensland we don’t really have respect for the cold and can’t cope with a day under 20’C. It is apparent that we all go into hibernation mode as soon as winter peaks it head out.

This is a super quick meal packed with veggie goodness substituting the rice with cauliflower is a easy low carb alternative.
Cauliflower Fried Rice
Low carb, veggie packed meal or side
4 cups your favourite stir-fry vegetables (eg. garlic, mushrooms, capsicums, onion, brussel sprouts, snow peas, green beans, bok choy, carrots etc.)
2 tbs sesame oil
2 tbs tamari or soy sauce
3 eggs whisked
- Blitz cauliflower in a food processor until resembles rice, set aside
- In a small pan add the eggs cook for 2-3mins then flip cook for further 2 mins
- Turn out onto a chopping board, slice omelette and set aside
- Heat oil in a wok on high heat, stir fry garlic then add vegetable cooking for 2-3mins
- Add tamari/soy sauce then add the cauliflower
- Tossing all together for 1-2 mins top with omelette
