Best Ever Creamy Cauliflower Mash

This seriously is the best mash I’ve ever made. If you are a lover of cauliflower or even if you are not this mash is so darn delicious. Silky smooth and creamy you wouldn’t even know it consists mainly of cauliflower.

When I served it along with my Hidden Veggie Meatloaf  to my kids it was a family dinner winner. Their plates were squeaky clean after they devoured it all like no tomorrow. I thought, now I could possibly tell them the truth that it has their no so favourite vegetable in it the one they say smells like stinky feet, but why risk it. Sometimes as parents a little white lie is harmless especially if it good for them.

Not only a family favourite this mash will impress at any dinner table. Served along side with stews, vegetables, grilled fish, casseroles, or your Sunday roast. This is one mash you will want to continue making time after time.

Ingredients

1 medium cauliflower, cut into florets

2 large potatoes, peeled and diced

4 cups vegetable stock (broth)

1/4 cup grated parmesan or vegan cheese (DF OP)

1 tbsp butter or Nuttelex (DF vegan op)

Salt & Pepper

1 tbsp chopped chives

Directions

  1. In a medium saucepan add stock, cauliflower florets and potatoes. Bring to the boil
  2. Turn heat to medium, cook for 10mins uncovered until tender
  3. Drain stock and place cauliflower and potatoes into a food processor. Add butter, parmesan, salt and pepper.
  4. Blitz until smooth. Taste,  adjust seasoning if necessary.
  5. Serve topped with chives
